To some people, being a waitress sounds like a piece of cake. Well, I work at Lonestar and there are a few steps we have to follow to make sure we are doing it the Lonestar way!

First, you have to greet the table. You approach them with beverage napkins for the number if people at the table. I would say, “Welcome to Lonestar, my name is Brittany, and I will be taking care of you.” I will also add, “for starters can I go ahead and get you something to drink, maybe an ice cold beer or an iced tea?” They will let me know what they want, and I will let them know ill be right back with it. Before I leave to go get the drinks, I ask them if they are interested in starting off with an appetizer, maybe some cheese fries or a texas rose. We have to give them examples of the things we are featuring that day. They will let me know their choice and then I will be off to get the drinks. If they ordered an appetizer I will immediately put that into the computer, so the cooks can go ahead and start cooking it.

Next, the drinks have to go out within a certain time. We have three minutes to get the drinks on the table. This is a strict rule they follow at Lonestar. With the drinks I bring out bread and appetizer plates. The appetizer usually is out shortly after this within eight minutes. Normally, when I return with the drinks the guests are ready to order. I will take each guests order left to right. This makes it easier for whoever brings the food out; they can place them in front of the guest in order. After the guest tells me what they want, I am to repeat their order right back to them. This is to make sure I heard them correctly and also give them a chance to change their minds, if they wanted to. As soon as the appetizer hits the table, we are to put the entrees in.
