CHAPTER 1

The Problem and Its Background

Introduction

Hollywood Food Court beside of Our Lady of Fatima University. Students and faculty members of the said university purchase their food in Hollywood food court. Therefore it is important for the Hollywood food court to ensure that they are implementing proper sanitation practices.

Providing a clean, safe foodservice facility like the University food court is fundamental in achieving a successful operation and ensuring the health and well being of both employees and customers. Also, a clean safe environment contributes to the satisfaction that the guest derives from dining. It also gives feeling of personal security to all.

The researcher aims to tackle the implementation of sanitation practices of the Hollywood food court beside at Our Lady of Fatima University Antipolo campus. The goal of the study is to determine whether the Hollywood food court follows and implements the sanitation practices that were based on the sanitation code by Department of Health.

Making high standards of sanitation is essential in all food service

establishments regardless of type or size. Consumers expect and demand a clean facility. In fact, it is the first factor that guests or students look for an eating establishment. The best way to ensure that proper sanitation procedures and high standards of cleaning are followed and achieved is to develop a department cleaning sanitation program. A cooperative effort is necessary to carry out an effective program. By conducting high departmental standards and conducting routine self inspections, management takes corrective action on sanitation deficiencies in order for the program to be effective.

Sanitation is a systematization and utilization of measures to protect the public health. Sanitation is a method of life. In actual practice, sanitation is a question of how pure food, clean air and a clean neighborhood. ( Perdigo 2004)
