Some of the things we Jamaicans make on Sundays are oxtail, curry goat, rice and peas, carrot juice. When you are making these things it will take some time, but I am going to focus on rice and peas and oxtail.

1. You would have to get oxtail, goat meat curry powder. And butter beans from a meat market.

2. You will need rice, red kidney beans, carrots, sweet can milk, irish potato and also vinegar or lemon juice from a supermarket.

3. Need nutmeg, cinnamon and vanilla.

4. Butter, Coconut milk, Thyme and Scalene.

5. Jamaican browning

You should wash the meat in vinegar and water about 2 times, then drain the water off and start to season with the Jamaican spice mix for oxtail, add just about 2 teaspoon of Jamaican browning sauce, and about 3-5 cloves of garlic. You should use your hands to mix it all in. when that is done you can wet a paper towel and rest it on top of the container so that it can marinate for about an hour. Heat a pot on medium and add a little cooking oil. When heated, add the oxtail to the pot but make sure not to add the sauce, and then continue to flip until oxtail is fully browned for about 10 minutes.

If the oxtail is oily then drop oxtail on some paper towel to drain before...
