Meat processing can be done in a variety of ways, each with advantages and disadvantages. One of the ways an establishment can process its meat is through cutting it on site. By cutting the meat on site there are many advantages as well as disadvantages.
Cutting one’s own meat can provide one’s food service establishment with the freshest meat possible. One can advertise to their guests that the meat is fresh cut and charge more to increase profits. Also, being able to control the portions can lead to more cost efficient business.
Although cutting meat on site can lead to many advantages to one’s food service establishment, there also lie a few disadvantages. One of the disadvantages can be the forfeit of space. By creating space for a meat cutting process, an establishment can lose valuable dinner room space. Another disadvantage to cutting meat on site may be the loss of time. It takes extra time to process and cut meat properly on site and this may take away from other valuable functions. Training or hiring experienced meat cutting personal may also prove to be costly to a food service establishment (Feinsten & Stefanelli 2005).
The process, by which meat such as beef is raised, also comes with a variety. Some farmers prefer to raise cattle that are grain fed, other such as Bill Curtis, believe in solely raising their cattle on grass only. Bill Kurtis boasts the advantages to raising grass fed beef lies within the values of a more nutritious, tender and robust meat. While Bill Kurtis boasts many advantages to raising grass fed only cattle, one can also point out a few disadvantages. One of the disadvantages while raising grass fed only cattle is the cost and time of fattening them. By only eating grass, the cattle require extra time and work to help aide the weight gain process to assure they are ready for processing.
