Pizza Hut at Wimbledon Centre Court Shopping Centre

The Project

T

he Pizza Hut Express is located on the busy first floor food court at the Centre Court Shopping Centre in Wimbledon, close to the famous lawn where the ‘Championships of Wimbledon’ are held. The restaurant serves approximately 200 pizzas per day from

Monday to Friday, increasing to 300 at the weekends and during school holidays.

The Problem

Since its opening, the premises had no grease management solution installed. Due to the high amount of food served each day, they were suffering from reoccurring blockages in their drains caused by the build-up of waste Fats, Oils and Grease (FOG), which also lead to unpleasant odours emitting from the drains. This resulted in a costly and high dependence on drain maintenance companies as a temporary solution. The limited space available in the kitchen often caused high levels of disruption and interfered with the smooth running of the busy kitchen.

The Solution Pizza Hut Express required a reliable solution which did not take up space and did not require high levels of ongoing staff maintenance.

After considering different options in the market such as grease traps, the Grease Guzzler was recommended by Pizza Hut’s head office, as the system had been successfully installed in many other UK branches.

Since its installation in September 2005, the restaurant has not suffered from drain blockages through the build-up of FOG. The restaurant Manager, Tony Hayllar, commented “the Grease Guzzler is very efficient. We considered different options and found the Grease Guzzler to be the best product on the market to meet our needs. It uses hardly any space and really provides peace of mind. It is brilliant! Since its installation, we have saved staff time and the expense, which is normally associated with drain blockages.”
