Food is essential in a man’s life. It is one of man’s basic needs. Humans need it to survive the journey life. This gives human bodies strength to face daily activities. Humans take different kinds of food every day, and this includes bread. The first bread made was probably a cooked version of a grain-paste, made from roasted and ground cereal grains and water. This may have been developed accidental by or by deliberate experimentation with water and grain. The formation of bread in the human society is important. This enabled humans to become farmers rather than hunters. This headed changes of lifestyle among the society from nomadic life into sophisticated life which led to formations of towns. Nowadays, bread can be bought in bakeries or bakeshops which are spread all over the world. As time passes by, people crave for new products and flavour that will satisfy their wants which are also aligned with the trending. These new products such as different kinds of breads, cakes, cookies, pastries and etc. were discovered and are now sold in bakeshops.

Ensuring safety and quality of foods is important nowadays for the protection of the consumers. For this reason, regulators now implement policies in food establishments including bakeshops. One of the regulators of this policies is the Bureau of Food and Drugs (BFAD) or now called as the Food and Drug Administration (FDA). Thiswas implemented indifferent countries such as the United States of America and Philippines. In the Philippines, BFADwas created by Republic Act 3720 mandated to enforce and administer the law, “it is the policy of the state to ensure safe and good quality food, drug and cosmetics and regulate the production, sale and traffic of the same to protect the health of the consumer”.
