The report is about the service strategies of an Indian takeaway and restaurant based in Auckland New Zealand. Kati Grill is the New Zealand’s first ever Kati Roll joint. Located in the heart of Auckland CBD. Kati Roll is all-purpose meal, which can eaten at any time of the day. It is quick and convenient lunch for office goers. Kati Roll (Kati Grill a restaurant in Auckland, 2011). Kati Grill comes in unique flavors, from chicken tikka for meat lovers to paneer tikka for vegetarians. Paneer is an Indian home-made cottage cheese. In India, Kati roll is known by different names in different parts of the nation. In Western part of India, it is called Kati Kebab roll, In South and East part of India it called a Frankie roll and in North part of India it is called Unda roll or Roti roll. A paratha is a popular name used in New Zealand for Indian bread. The Kati Roll is a flat bread made from flour with no yeast, with a layer of egg and wrapped with tandoor cooked chicken, lamb or paneer and finished with coriander and mint chutney (Kati Grill a restaurant in Auckland, 2011). The meat and paneer are marinated overnight in creamy yoghurt and blend of Indian spices and then cooked in tandoor to give the flavours and tenderness. All the ingredients are hand made by Kati Grill kitchen staff, from Paratha to chutneys to sauces.
