As Filipinos, traditions during celebrations such as fiesta, birthdays, weddings, and events that are of importance to us would not be complete without meals served with pork meat. Today, pork is one of the most consumed meat in the Philippines. According to research by Stanton et al. (2008), total pork consumption reached an average of 1.688 million tons in the last six years and was reported to be increasing as Philippine population increases. With pork being less expensive than beef, the per capita consumption of pork per person has reached an average of 14.88 kilograms for the past six years.

Ka-Freddie’s Meat Shop (Pork)

Mr. Freddie Castro has been in the business of pig slaughtering and selling pork meat since 2003. For the past elven years, he maintained a good relationship with his supplier and customers. Mr. Freddie does the slaughtering and butchering near his house located at Lambakin, Marilao, Bulacan.

Mr. Freddie has been buying live pigs from a cooperative pig farm/pen, Reyes’ Homestead Hog Raising located at Saog, Marilao, Bulacan for only 5 – 15 minutes away from his slaughter house. Every Sunday dawn, Mr. Freddie in his motorcycle-operated cart goes to the cooperative pig farm to buy at least two live pigs of an average of 103-140 kilograms. From the pig farm, Freddie will bring the pigs back to his slaughter house and start the slaughtering and butchering of it.
