Pulled Pork Adobo Sandwiches
Barbecue sauce imparts a touch of sweetness to these savory sandwiches. For a special touch, add a slice or two of fresh kesong puti as a topping.
Serves 3
Prep Time 30 minutes
Cooking Time 15 minutes
1 tablespoon vegetable oil
1 medium white onion, sliced
1 cup shredded leftover adobo
3 tablespoons brown sugar
3 tablespoons barbecue sauce
3 tablespoons adobo sauce
Salt and pepper, to taste
3 big pieces pandesal, sliced in half and toasted

1 Heat oil in a pan over medium heat. Sauté onions until translucent. Set aside.
2 Sauté shredded leftover adobo in another pan.
3 Add brown sugar, barbecue sauce, and adobo sauce to the adobo. Simmer for 10 minutes. season to taste. set aside.
4 Assemble the sandwich: Fill each pandesal with the pork mixture. Top with caramelized onions and sliced tomatoes.

Like it spicy? You can add a tablespoon of wasabi to the garlic mayonnaise to turn up the heat.

For the homemade tapa
1/2 kilo thinly sliced beef sirloin
1 tablespoon garlic powder
1 teaspoon onion powder
2 tablespoons soy sauce
1 tablespoon cane vinegar
1/2 cup mayonnaise
1 teaspoon finely minced garlic
2 tablespoons horseradish (optional)
4 mini baguette loaves
1/2 kilo cooked tapa
1 cup caramelized onions
3/4 cup shredded mozzarella cheese
1 Make the tapa: mix all ingredients together. Cover and place in the refrigerator for at least 2 hours to marinate the beef. Heat oil in a pan and fry tapa until cooked. You can make this in bulk and freeze it until ready to use.
2 In a small bowl, mix together mayonnaise, garlic, and horseradish (if using). Split baguette loaves in half and spread the mayonnaise mix on each side. Toast until loaves are crispy on the outside.
