category of sorbate. Potassium sorbate is industrially produced by neutralizing sorbic acid with potassium hydroxide. Sorbic acid

which is an essential raw material to manufacture sorbate occurs naturally in some berries however, most of the sorbic acid

required for the production of a wide range of sorbates is manufactured synthetically.

Sorbates have several properties which make suitable for use in food industry. Sorbates are naturally occurring polyunsaturated

fatty acid that gets completely metabolized in the body. Sorbates are stable in a wide pH range. Sorbates when used in foods do

not affect the flavor, color and taste of the foods. In addition, sorbates exhibit high range of resistance to food from the attacks
