1. Considering the solubility and chemical properties of monosaccharides, predict what biochemical and physiological effects a persistently higher than normal concentration of glucose in the blood stream would have on a person.

A: It is because mono-saccharides have more functions. Mono-saccharides is water-soluble,mono-saccharides can reduct to form sugar alcohols. Oxidation to produce sugar acids

2. What effect does temperature have on isomerization of sugars and what effect does this have on the relative sweetness of such sugars?

A: Higher temperature will cause glucose isomerization, and the sugar will be sweeter

3. Explain the biochemical process used by bees when making honey. Honey can have a wide range of flavors. Explain what is responsible for such flavors and suggest how you would go about developing honey with a novel flavor of your choice.

A: The biochemical process bees used is just mix sucrose and water together. Enzymes that bees produce turn the sucrose into glucose and fructose . If I want to develop honey flavor, I will change the amount of water, and amount of sucrose.

4. Explain the role played by oligosaccharides in cell recognition.

A: The oligosaccharides in the cell are glycoprotein and glycolipids, they can help to determine cell types. Oligosaccharide cell recognition of glycolipid can help determining blood type. The Oligosaccharides found on the A, B, and H antigen occur on the non-reducing ends of the oligosaccharide.
