Celiac Disease

Celiac Disease is a disorder that goes undiagnosed until it causes serious issues with the patient. It is an autoimmune disorder with no medical cure. The only known cure to consume a completely gluten-free diet, and if the patient continues to eat gluten their chances of cancer rise exponentially. The risk of gastrointestinal cancer is forty to one hundred times higher than those of the normal population (www.celiac.com). We will discover new ways to relieve the symptoms and pain by eliminating gluten completely from the individuals’ daily intake. Celiac disease can be revealed when the person consumes gluten, wheat, rye or barley. The disease affects “one in 133 Americans”, which is approximately three millions people (www.celiaccentral.org). It is genetic and has been shown to affect mostly Northern Europeans and now it is being discovered to affect Hispanics, African-American and Asians as well (www.celiac.com). Research for Celiac Disease is comprised of patients seeking medical treatment for gastrointestinal ailments, such as abdominal bloating, chronic diarrhea, progressive weight loss, etc. (www.CeliacDisease.com). The disease can go undiagnosed for as long as ten years with the chances of cancer rising.

It is important to discuss with the individual that non-compliance with the diet to protect the gastrointestinal system will increase the risk of cancers and other diseases. Hypothesis being tested is a gluten-free diet that will be tested on my daughter and I who have Celiac Disease. It is follow the progress of effects on the disease when gluten is avoided. Also regressions, when gluten cannot be avoided or it is not known to be in the food being consumed.
