Blood platelets are irregular-shaped bodies in the blood that form clots when needed to prevent excessive bleeding. If your diet is low in calcium or vitamin K, the platelets may be diminished or have a difficult time clotting. Additionally, eating a diet rich in specific nutrients can help to boost blood platelet levels and help the body to clot more efficiently.

Kale is one of the best foods to eat in order to increase blood platelets. The World's Healthiest Foods website states that the vitamin K found in kale helps boost blood platelet levels and helps them not to stick to each other so that they are more effective in clotting blood when necessary. Vitamin K can sometimes be difficult to attain through the diet, yet the World's Healthiest Foods website states that there is about 1062mcg of vitamin K in 1 cup of boiled kale, a whopping 1,327 percent of an adult's daily recommended value of vitamin K.
