Case Study: Great Italian Food Company

Background: Great Italian Food Company

Family owned chain of four restaurants located in the greater St Louis area. Restaurants are family establishments with basic Italian style décor and cuisine.

Goal is to increase family income to insure continued lifestyle.

Walking thru the steps with GIFC to establish a strategic plan:

1. The establishment or updating of a mission statement with a clear and concise expression of the basic purpose of GIFC.

2. Updating of the strategic vision- How big do you want to become, what services would you want to see in your portfolio?

3. Strategic goals could then be derived from the mission statement and vision. Revamping the restaurants, upgrading the menus to include other items, maybe even other ethnic foods to test market desirability.

4. Analysis of external threats- density of Italian restaurants in the desired expansion location to include mall food courts which traditionally provide fast food Italian cuisine. Ethnic make of the location, is there a strong Muslin population which is not allowed to eat pork? Is this a working class community which an upscale place may not do well? Are major competitors also looking in the area to expand?

5. Analysis of external opportunities- can we expand into the area with limited investment such as upgrading and rebranding a restaurant already in the area.

6. Analysis of company strengths and weaknesses

Strengths:

Authentic Italian cuisine and décor

Clear mission statement

Reasonable prices

Profitable

Family establishments
