Betsy’s Herby Sausage and Apple Stuffing

Cook Time: 25 Minutes + 1 hour

1 1/2 cups cubed sourdough bread3 3/4 cups cubed white bread1 pound Jimmy Dean’s Sage Sausage1 cup chopped onion3/4 cup chopped celery5 teaspoons fresh sage3 teaspoons fresh rosemary | 1 teaspoon fresh thyme1 Granny Smith apple, cored andchopped3/4 cup Craisins2/3 cup minced fresh parsley1 ¾ cups turkey stock (can sub up to ½ cups with white wine)4 tablespoons unsalted butter, melted |

1. Preheat oven to 350 degrees F. Lightly butter baking pan to cook stuffing in. A 13” by 9” foil pan should do nicely.

2. Spread the sourdough and white bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes into pan.

3. In a large skillet, cook the sausage and onions over medium heat, stirring & breaking up the lumps until evenly browned. Drain fat. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.

a. *Note, you can substitute sweet turkey sausage for regular sausage in this recipe

4. Pour sausage mixture over bread in pan. Mix in chopped apples, Craisins, & parsley.

5. If making the day before, drizzle a little bit of butter over the mixture, cover, and refrigerate over night.

6. Preheat oven to 350 degrees F. Drizzle with turkey stock and melted butter, and mix lightly. Bake covered for 40 minutes, then uncover and continue to bake for approximately 15 minutes more, checking for doneness.
