Identify the problems with the current layout and reconfigure the layout shown in Figure C7.2 to respond to customers’ demands for speed and convenience.

There are several issues that have to be addressed when looking at the current layout of the restaurant:

* Crowding in the cashier area during peak hours

* Customers demanding speed and convenience

* There is a growing demand for a party space

* Phone-in, carry-out customers want orders ready when they arrive, and if they have to wait there is no space dedicated to them

* There is a growing number of competitors in that same area

* There is a high turnover rate among the servers

* There are no emergency exits

* No logical system for take away, there is no drive through and there is no type of system that shows when pizza’s are finished
