Step I: The As-Is Process Map

Step II: Case Analysis

Objectives:

1) Satisfy requirements from the growing number of urbanite clientele while maintaining profitability.

2) Increase transparency and cross-functional sharing in internal and external communications.

3) Increase organizational efficiency by minimizing non-value added activities and manual input.

Problems:

1) Concentration of information critical to the operation of the business in the hands of one person (Susan).

Problem source: Lack of data sharing and centralization of data. Susan, the kitchen chef, is responsible for keeping recipes and ingredient purchase quantities of all dishes in her recipe book. The information in this book is not shared with anyone at Northern Exposure. Suppliers relevant to each ingredient are not recorded, but are kept in her head - a knowledge base developed through years of cooking experience. Transparency in information pertaining to food preparation is completely absent.

As it currently stands, Northern Exposure is nothing without Susan. Centralized around her recipe book and her mind, Susan holds full and exclusive ownership over the information required to prepare food. As a result, the potential departure of Susan could spell the end of the business....
