OVERVIEW OF THE ORGANIASTION

Mezzaluna is a private limited company with its head office based at Haleland Park Maraval. It is a small high end fast food restaurant that serves mainly Mediterranean and Arabic foods.

This organization was established in February 2008, by Frank Monarco and his wife Rebecca. They saw this type of business as an opportunity to introduce authentic Mediterranean foods into the Trinidad and Tobago market. Since their opening in 2008, they have successfully opened a second branch at a local “hot spot”, Movie Towne. Their menu offers a wide range of foreign flavours. Mission statement:

“To offer our customers a wide range of food options of high quality at key locations that are well suited and designed to satisfy their unique hunger needs and at a competitive price.”

Strategy

Chandler defined strategy as “The determination of basic long-term goals and objectives of an enterprise and the adoption of courses of action and the allocation of resources necessary for carrying out the goals.” (Chandler 2008: 72)

Mezzaluna adopted a cost focus strategy. They have located themselves geographically in high traffic malls that cater to the middle and upper social classes. These locations were chosen as these persons are likely to be less price sensitive.

Another key element of Mezzaluna’s strategy is the close management control practiced by Frank. This is shown by his presence at the branches in order to assure excellent service and quality standards at a reasonable price.

They have been able to lock in the interest of the consumer as they offer a unique take away menu of ethnic foods from the Mediterranean and the Middle East.
