I worked with a baked products manufacturer few years ago as a trainee in order to fulfill the requirement of Industrial Training for my Bachelor’s Degree. This manufacturing company, company X, is one of the most well known bread manufacturer in Malaysia, and the products has been a part of Malaysian morning routine for years. As the company is supplying and exporting its product locally and outside Malaysia, the quality of the product is the main concern as to sustain its brand in the market.

The company X will conduct meeting at least once a week just to maintain and/or improve the quality of its product. All departments including the production, engineering and maintenance, marketing as well as the sales department, will seat together, and this team that consisting of the food technologist, engineers, production managers, marketer and sales people, will identify and solve the Control Point (CP) and the Critical Control Point (CCP) to ensure the quality (chemically, physically and microbiologically) of the products are guaranteed. In every meeting, members will identify every problem, even though it is just a minor problem that appear or exist in the processing of the product, starting from the selecting of the raw material until the distribution of the products.

Raw material is the most crucial criteria to be prioritized as it is one of the main factors determining the safety and quality of the final product. In order to make a good quality of bread, we need good quality of ingredients (flour, pre-mix flour and its secret recipe, shortening, yeast and water) as well. There was a time (during my Industrial Training), the final product, the bread (mostly the white and wholegrain fibermeal bread) were not fulfilling the specification and its standard. The holes structures of crumb were irregular, and the smell as well as the taste of the bread had changed. And the worst thing was, the bread became moldy before its expiry date.
