DIET (LEMON LIME ORANGE) MINERAL WATER

1. Abstract

Design of mixtures was held to know the best mixture of sweeteners in the Diet Mineral Water. There were three types of sweeteners used and ten differences made. The sweeteners can be synthetic, natural, or combination of both. The mineral water is evaluated by subjective test, which is known as sensory evaluation. Through the sensory test, mixture of Splenda and Sucaryl was the best for synthetic sweeteners; however the Stevia was the best for natural sweeteners. The combination of both synthetic and natural sweeteners was made to observe the best commercial test of the mineral water and it is found that the balance ration of natural and synthetic sweeteners gives the most preferable taste.

2. Introduction

Over the last 90 years, there has been a huge consumption shift from complex carbohydrates (wheat and corn) into simple carbohydrates (sugars). People tend to consume more sugars in beverages than consuming heavy meal. This increases the number of obesity, diabetes, and tooth-decay all over the countries. There are also other diseases that are caused by consuming too much sugar, such as hypoglycemia, hypertension, and cancers. Therefore, the food and beverages companies start to develop its products by finding a substitute for sugar with a better health effects. They finally found synthetic sweeteners which can solve the health problems with similar taste to sugar and it is called artificial sweeteners.

Artificial sweeteners are one the most popular food additives that is used in many food and beverages products, nowadays. It is used to substitute the natural sugar with less or no calories. It is water soluble and stable to light, pH, and heat (Agrilife Extension 2010). Moreover, it brings many health benefits for consumers.
