Executive Summary

Introduction

Hullabaloo Diner, the focus of team four’s semester project, is a diner restaurant located in Wellborn, Texas. It serves a variety of home cooked dinner entrees and breakfast items. Its popularity skyrocketed after being featured on Food Network’s Diners, Drive-ins, and Dives television program, and the restaurant is now plagued by excessively long wait times during lunch time on weekends. Team four’s goals with the semester project include an accurate analysis of Hullabaloo’s current customer dining process and provide recommendations Hullabaloo could use to decrease the total amount of time it takes customers to go through the dining process.

Analysis

During our Analysis we discovered that the bottleneck of the entire process was the amount of time it takes chefs to prepare the food and process customers’ food orders. Hullabaloo’s current setup includes three chefs who take an average of 16.27 minutes preparing a table’s food and an average wait of 29.54 minutes from when a customer places a food order to when a chef actually starts making the table’s food. In addition to the food preparation bottleneck is the lack of seating in the diner. The current setup can accommodate only sixty people and includes several unused areas outside the diner.

Recommendations

The first recommendation is to open up the unused building adjacent to the diner by putting in five additional tables. This would allow for twenty more seats. The second recommendation is to add an additional chef and an additional waitress. The combined effect of these two recommendations is to reduce the average time a customer spends in the process from 107.38 minutes to 75.315 minutes as shown in our revised process Extend model.
